Defrost解凍

IQF means each piece is frozen loose — take what you need, reseal the bag, and get the rest back in the freezer at once. Thaw the pieces you are using in the fridge on a plate, a few hours or overnight. Never at room temperature.IQF即逐件急凍 — 取出所需件數,袋口封好立即放回冰格。要用的雞件放碟上置雪櫃解凍數小時或一晚。切勿室溫解凍。

Cook煮法

This is raw chicken: cook to 74°C, juices running clear. Tenderloins take 3–4 minutes in a hot wok or pan — velvet them with a little cornflour first for a silkier stir-fry. Drumsticks want longer: braise 25 minutes with ginger and soy, or roast at 200°C for 35–40.此為生雞肉:必須煮至74°C、肉汁清澈。雞柳猛火炒或煎3–4分鐘即熟 — 先以少許生粉醃過,炒起更滑。雞下槌需時較長:薑蔥豉油炆25分鐘,或焗爐200°C焗35–40分鐘。
